Mercure Brigstow Bristol Hotel is our 4 star hotel located in the vibrant part of Bristol city centre.

We are just steps away from main venues in Bristol including Saint Nicolas Market, The Hippodrome, The Old Vic, Cabot Circus and the Floating Harbour. Buttermilk and Maple, our restaurant, coffee shop and bar is open from the early hours to late at night. Buttermilk and Maple is a concept that delivers excellent quality food during the day; inspired by the lounge-loving Australian café scene and a dash of Brooklyn East Coast. We are conscious to promote the best of Bristol, from locally sourced products to carefully curated craft beers, ciders and cocktails.

Buttermilk & Maple

We are now looking for a Chef De Partie to join the fantastic team at Buttermilk & Maple , Mercure Brigstow.

Key Responsibilities:

  • Ensure that a high standard of preparations and presentation is achieved before any dish leaves the kitchen.
  • Ensure correct  kitchen stock rotation and Food Hygiene control are adhered to  on a daily basis.
  • Ensure accurate records are kept at all times relating to the food production and wastage, for all service periods.
  • Ensure that all foods are labelled, stored and handled in accordance with the Hotel and Health and Safety requirements.
  • Ensure all hygiene, health and safety standards are adhered to and the Hotel’s Health & Safety policy are complied with.
  • Make sure the wastage is kept to a minimum at all times.
  • Menus must be followed to ensure all financial targets are achieved.
  • Complete all required training (Food Hygiene & Safety, Health & Safety & Fire Safety) via the Saeker Training Programme

Person Specification

1.  Knowledge, skills and abilities

  • Right to work in the UK
  • Strong customer awareness and focus
  • Able to work flexibly to suit the hours (various shift patterns) & needs of the Kitchen
  • Good interpersonal and communication skills 
  • Ability to work and interact well as part of a team
  • Sound organisational skills with the ability to identify and juggle priorities

2.  Proven experience/education level

  • Previous kitchen experience is preferable
