Executive Head Chef

We have an amazing opportunity for an exceptional Executive Head Chef to lead our award winning kitchen brigade in Yorkshire's only 5* star hotel!

Position Purpose

  • You will lead and coach your team on a day to day business as well as executing the agreed food strategy for the business resulting in delivery of the Triple Bottom Line results – relationships, reputation and results. 
  • The role will be responsible for all food outlets including The Rise restaurant and bar, Hudson's, conference and banqueting, WRL, in room fining and the staff canteen.
  • The Grand needs to set the standard in the Region with regards to service, quality, provenance and sustainability. You will achieve this by working closely with your suppliers, your team, the wider grand team and influencers within the region. 

Key Responsibilities

  • Recruit, retain and build an exceptional team
  • Review the profitability and popularity of dishes on the menu and make changes where applicable in conjunction with the Hotel Manager and Food & Beverage Manager
  • Monitor standards of production to ensure consistent quality at all times
  • Payroll management to meet budgeted payroll percentages
  • Control of purchasing levels to ensure all necessary measures are in place to maintain budgeted food costs, whilst ensuring adequate food stocks
  • Develop and train all of members of the kitchen team ensuring that all training given is accurately recorded
  • Set objectives for each staff member and hold regular reviews
  • Ensure the kitchen is maintained to high hygiene standard at all times and safe food handling practices are followed
  • Ensure COSHH and HACCAP guidelines are achieved and maintained. Check monitoring procedures daily

  1. Knowledge, Skills & Abilities
  • Ability to coach team at all levels
  • Strong Front of House Presence
  • Strong Communication skills
  • Menu design & delivery in line with commercial needs
  • Cost of Sale & cost delivery
  • Food safety Level 4
  • Experience of Conference & Banqueting for 80 +
  • Experience in award winning restaurants
  • Knowledge of operating multiple food outlets
  1. Proven Experience/Education Level
  • Must already be an Executive Head Chef, Head Chef or number 2 in a large business.
  • Michelin star/AA Rosette outlet experience
