We are now looking for a passionate and enthusiastic Sous Chef Tournant to join the fantastic team at the award-winning Hilton London Bankside.

Position Purpose

We are currently looking for a driven, ambitious Sous Chef who enjoys the challenge of working in an evolving high-end market. This is a fantastic opportunity for a Sous Chef with knowledge of current food trends, a creative approach to the production of food and the desire to innovate and push culinary boundaries.

Key Responsibilities

As our Sous Chef, your main responsibilities will be to manage all aspects of the kitchen including operational, quality and administrative functions. You will also;

  • Ensure the consistent production of high-quality food through all hotel food outlets;
  • Assist in positive outcomes from guest queries in a timely and efficient manner;
  • Ensure produce and ingredients are of a good quality and stored correctly;
  • Ensure resources support the business needs through the effective management of working rotations;
  • Manage the kitchen brigade effectively to ensure a well-organized, motivated Team;
  • Control costs without compromising standards, improving gross profit margins and other departmental and financial targets;
  • Assist other departments wherever necessary and maintain good working relationships;
  • Comply with hotel security, fire regulations and all health and safety and food safety legislation;
  • Report maintenance, hygiene and hazard issues and be environmentally aware;
  • Maintain a safe and hygienic kitchen environment.

Person Specification

Knowledge, Skills & Abilities

  • Desire and a passion to cook with fresh quality ingredients sourced from the best suppliers
  • Excellent communication skills
  • Strong leadership skills;
  • Team player with outstanding interpersonal skills
  • High standard of personal presentation
  • Flexibility with rotating shift patterns, including weekends
  • Able to work with relevant hygiene, health & safety guidelines
  • Be well organised and work well with colleagues across the hotel
  • Be positive, punctual, reliable and have a positive attitude
  • Dedication and understanding of the demands of a busy business;
  • Excellent planning and organizing skills, ability multi-task and meet deadlines;

Proven Experience/Education Level

  • NVQ level 3 or similar
  • Understanding of HACCP
  • Food Hygiene Certificate
  • Previous experience as a Sous Chef/ Jr. Sous Chef within high end, dynamic kitchen environment, ideally from 5* hotel operations;
